Procedure
- label Paper towel
- place small spoon full of each carb on paper towel
- evaluate sweetness with 0-5 scale
- Record value in data table and look up function of carb and what type of carb it was
Purpose
The differences in the structure of cabs. are how many rings they have and what elements they have in them. Usually the monosaccharide's are sweeter and more granular whole the cabs with more than one ring are powdery and taste horrible. The bigger the structure the less sweet and more powdery the carbs are.

Data analysis
- Glucose and fructose were the sweetest and the were both monosaccharide's. I think the number of rings do affect the sweetness because cellulose and starch were polysaccharide's and they tasted horrible, so the more ring the worst it tasted.
- It seemed like the lower the amount of rings in each molecule the more granular and grainy it was. While the molecules with more rings were powdery more and fine.
- In my group the samplers all gave the same rating, but three things that could have made a difference in the rating are your taste buds, you my have used the same finger and gotten some of the other molecule on the new one, and you might have a different sweetness test scale.
- The monosaccharide's do have a very similar structure. Also the similar structured ones have similar textures as well
Reflection
I liked this project because we got to try different molecules and I learned a lot about the molecules. I had a good time with my lab partner because we get along well and work very efficient together. I found it interesting how the monosach's. were sweet while the polysach's. were bitter and tasted horrible. Over all I had a great time doing this lab.
